Menù: (Not only) Traditional Ladin Cuisine

After more than 30 years of experience in the tourism industry, the opportunity of opening the ‘Dolomeats all’Aquila’ restaurant has arisen. I thought that first of all, I would have liked to thank those who have accompanied part of my experience, as a simple gratitude gesture that had always been implicitly present, and I do not hide the emotion I am feeling while I am writing this text. On the other hand, I considered that it would have been important to valorise what was the most natural vocation of hotel Aquila, as being one of the very first hotels in Cortina. As a matter of fact, it dates back to 1780, when Tommaso Ghedina opened the ‘Black Eagle Guesthouse’. Fi-nally, I also wanted somehow to pay homage to our roots, as Cortina d’Ampezzo or Anpèzo, is one of the five historic Dolomites Ladin valleys. For these reasons, we de-cided to make of Ladin cuisine dishes the strong suit of our menu.
I have found the solution when I was observing my mother, Teresa, who is not young an-ymore, but still full of energy, having so much fun while cooking. I then understood that I wanted to thank her through her dishes, recipes of traditional Ladin cuisine which are to-day presented in the pages of this menu and which I hope could be a small treasure for my children, if they will do this job in the future.
